Pan Fried Gnocchi brochettes with mozzarella and candied cherry tomatoes
INGREDIENTS
- 1 pack Pan-fried gnocchi - Original
- 1 pack Pan-fried gnocchi - Spinach
- 300 gr red and yellow cherry or datterini tomatoes
- 200 gr mozzarella balls
- 1 tbsp sugar
- Extra virgin olive oil
- Salt and pepper
METHOD
Wash the tomatoes and cut in half. Heat 2 tablespoons of oil in a large non-stick pan before adding the tomatoes, sprinkle with sugar and sauté for a couple of minutes until they are lightly browned and caramelized. When cooked, season with salt and pepper.
In another pan heat a tablespoon of oil and sauté the pan-fried gnocchi for 5 minutes following the instructions on the pack and, when they are golden and crunchy, remove them from the heat. In the meantime, drain the mozzarella cherries.
With the wooden skewers, prepare the brochettes adding the gnocchi and alternating with tomatoes and mozzarella balls, then serve or put to one side ready for a pique-nique or barbecue!
